Breakfast Burrito with Luas

Avocado Toast: 1 flat bread, 2 tablespoon of soft cheese (like cream cheese or Laughing Cow) 1 small avocado, lime drops, salt, paprika and a bit of your favorite condiment (we used Everything but the Bagel Seasoning by Trader Joe’s).



Chilorio Sandwich

2 whole grain bread loafs, a small handful of spinach, 1/2 a bag of chilorio meat, 1 slice of cheese, 1/2 an avocado and Cesar dressing.



Breakfast Burrito with Lua

1 large whole grain tortilla, 1 tomato diced, 2 tablespoons of chopped bell pepper, 2 tablespoons of black beans, 1 egg, 1 tablespoon of finely diced onion, 1 tablespoon of shredded cheese and half and avocado in small cubes. In a greased hot pan, cook the tomato, bell pepper and onion for 2 minutes. Add the beans egg and cheese and cook until egg is fully cooked. Fill the tortilla with this mixture and the avocado, form a burrito and return to the pan until lightly toasted. Serve with your favorite salsa or cheese sauce and Lua Chips.



Artichoke and spinach dip

1 can of artichoke hearts, 1/2 a bag pf spinach, 1/2 cup pf cream cheese, 1/2 cup of sour cream, 1/2 cup of parmesan cheese, juice of 1 lime, 1/4 cup of milk? 1 tablespoon of hot sauce, salt and pepper to taste. Mix all the ingredients and bake at 375 for 25 minutes.



Brunch with Eggs, Avocado and Lua Chips

1 toast with natural yogurt spread (before toasting) and ground cumin. Cover with sliced avocado and paprika. Finally, your choice of eggs, served with smoked salmon with lime juice and minced leek and, for an extra crunch, add Lua Chips!



Queso Sauce

2 cups of cheddar cheese in small cubes or shredded, 1 tablespoon of corn starch, 1 tablespoon of butter, 1/2 a yellow onion finely chopped, 1 teaspoon of cumin, 1 teaspoon of garlic powder, 1 jalapeño finely diced, 1/4 cup of yellow corn, 1 handful of chopped cilantro, 1 can of evaporated milk. Sauté the onion until golden brown. Add the rest of the ingredients and whisk until melted.



Fish Tacos

3 Sea Bass fillets, 1 tablespoon of salt, 1 teaspoon of chili powder, 1 teaspoon of cumin, 1 tablespoon of olive oil, 1/2 cup of corn, 1/2 cup of chopped cilantro, 1/2 cup of tomato sauce, juice of 1 lime, 1/2 cup of cream cheese, 1/4 cup of milk, 2 adobo chipotles minced. Sauté the corn with the olive oil. Add the tomato sauce and the fish and cook for 4 minutes. Add the cilantro and lime juice, flip the fish and cook 4 more minutes. To make the sauce, mix the cream cheese, chipotle and milk. Serve with tortillas, avocado and Lua Chips.



Vegan lentil dip

1/2 a yellow onion, 6 roman tomatoes, 1 bell pepper, 1/2 cup of chopped celery, 1tablespoon of curry powder, 2 cups of cooked lentils. In a bit of olive oil fry the chopped onion and celery for 3 minutes. Add the tomatoes and bell pepper and cook at low heat for 1 hour. At the end add the cooked lentils and season with curry and salt to taste.



Falagel Bites with Lua Chips

1 cup of baby spinach, 1/2 an avocado, 1 tablespoon of olive oil, 1 tablespoon of balsamic reduction, and pieces of Lua C$



Spinach Salad

1 cup of baby spinach, 1/2 an avocado, 1 tablespoon of olive oil, 1 tablespoon of balsamic reduction, and pieces of Lua Chips to give it a crunch!



Vegetarian Chili

1 small purple onion chopped, 2 garlic cloves chopped, 2 chopped bell peppers, 2 cans of diced tomatoes, 1 can of yellow corn, 1 can of beans (pinto or black), 2 tablespoons of chili powder, 2 teaspoons of cumin, 2 teaspoons of paprika, 1 teaspoon of dried oregano, juice of 1 lime, 3 cups of vegetable broth or water, salt to taste. Cook in slow cooker at low heat for 7 hours. Serve with cilantro, cheese, sour cream, avocado and Lua Chips.



Chickpea Burguers

1 cup of rolled oats, 1/2 cup cooked chickpeas, 1/2 cup of hummus, 2 tablespoons of chopped onion, 1 teaspoon of cumin, 1 teaspoon of cayenne pepper, 1 teaspoon of garlic powder, salt and pepper to taste. Mix all ingredients and form patties. Bake in greased pan at 350F until golden brown (15 min on each side approx.)



Asian Styled Crab Meat Dip

1 small package of imitation crab cut in chunks, 1 tablespoon of sesame seed oil, juice of 1 lemon, 1/2 cup of soy sauce, 2 tablespoons of chopped leek, 1 jalapeño chopped, 2 tablespoons of chopped cilantro, 2 tablespoons of chopped cucumber, 2 tablespoons of toasted sesame seeds, 1 tablespoon of peanut butter and 1/2 cup of cream cheese.



Chicharronera Dip

1/2 cup of cottage cheese, 2 tablespoons of Chicharronera sauce, 2 tablespoons of chopped cilantro, 1 tablespoon of Worcestershire sauce, sal and pepper to taste.



Lua "Nachos" Supreme

1 bag of Lua Chips, 1 chicken breast cooked and shredded, 1/2 cup whole black beans, 1 cup of melted yellow cheese, 1/2 c$



Salmon Sandwich with Spinach Salad

For the sandwich: 4 ounces of smoked salmon, half and avocado, juice of half a lime, 2 tablespoons of feta cheese, onion salt to taste. Add cappers if desired. For the spinach’s dressing: 1 tablespoon of soy sauce, 1 tablespoon of honey, 1 tablespoon of sesame seeds.



Eggplant Carpaccio

1 eggplant sliced thinly, 2 tablespoons of olive oil, 2 tablespoons of diced leek, juice of half a lime, 2 tablespoons of shredded parmesan cheese. Place the eggplant in a cookie sheet and broil at 400 degrees (14 minutes per side) place the eggplant on a serving dish and and garnish with the rest of the ingredients. Serve with Lua Chips.



Classic Hummus

1 can of chickpeas (garbanzo beans), rinsed and drained, 1 peeled and smashed clove of garlic, 3 tablespoons tahini, 3 tablespoons lemon juice, 2 tablespoons extra virgin olive oil, 1/2 teaspoon ground cumin, a pinch of salt, and a freshly-cracked black pepper (to taste). Process all ingredients and serve.



Jalapeno Guacamole

2 avocados, juice of 1 lime, 1 tablespoon of pickled jalapeños, 1 tablespoon of chopped cilantro, salt to taste. Mix all the ingredients.



Baked Herbed Cheese With Lua Chips

1 block of Cheese such as Brie, Feta cheese, and Panela cheese. Extra virgin olive oil for drizzling and a handful of chopped fresh herbs such as: oregano, chives, thyme, and/or parsley. Red pepper flakes according to preference. Bake the cheese with all of the ingredients on broil for approximately 15 minutes or until caramelized.



Minty Strawberry Lemonade

7 cups of sparkling water, 1 cup of lime juice, 1/2 cup of mint leaves, 1/3 cup of agave, 1 cup of strawberries cut in half. Blend sp$



Lua Chips with Corn Salsa

1 cup of corn kernels, 1 diced tomato, 1 thinly sliced scallion, 2 tablespoons of chopped cilantro, 1 tablespoon of lime juice, salt, and pepper to taste. Mix all of the ingredients.



Baked Falafel

2 cups of cooked chickpeas, 2 tablespoons of cilantro, 1 tablespoon of tahini, 2 eggs, 1 small onion, 2 tablespoons of olive oil, 1 cup of whole wheat flour, 1 teaspoon of coriander and 1 teaspoon of cumin. Process all ingredients. On large baking sheets, scoop about 2 tablespoons of mixture to form falafel. Bake at 350 for about 20 minutes.



Roasted vegetables with Lua Chips

Asparagus, bell peppers, mushrooms, eggplant, spinach and tomatoes.



Roasted Tomato Chicken

Roast 10 tomatoes, 1 red onion and 2 bell peppers. Then process the roasted vegetables to create the sauce. Mix the sauce with 4 chicken breasts, boiled and shredded. Serve with guacamole, black beans, your favorite Mexican cheese and Lua Chips.



Nutty Roasted Bell Pepper Dip with Lua Chips

Roast 3 bell peppers on broil with 2 tablespoons of balsamic vinegar. Remove skin and seeds and process bell peppers with: 1 cup of ricotta cheese, 1 tablespoon of chopped basil, 1/2 cup of walnuts and 1/2 cup of parmesan cheese. Add salt and pepper to taste.



Pizza Dip with Lua Chips

1/2 cup mozzarella cheese, 1/2 cup ricotta cheese, 1/2 cup tomato pizza sauce, 1 teaspoon of chopped oregano, salt and pepper to taste. Place on a pyrex with 1/2 cup of parmesan cheese on top. Bake at 350 for half an hour.



Carpaccio cheese ball with Lua Chips
0
1 cup of chopped ham for carpaccio. Mix the ham with 4 tablespoons of chopped capers, 2 tablespoons of chopped leeks, 1 tablespoon of olive oil, 1/2 cup of grated parmesan cheese and juice of 2 limes. Form a ball with 1 cup of refrigerated cream cheese and ham mixture. Serve with Lua Chips.




Tuna Tartare with Lua Chips

2 cups of Sushi grade fresh tuna cut into chunks, 2 tablespoons of sesame seed oil, 2 tablespoons of soy sauce, 2 tablespoons of lemon juice, 1 tablespoon of hot sauce, 2 tablespoons of toasted sesame seeds, 2 tablespoons of minced chives. Serve with avocado, cilantro leaves and Lua Chips.


Serve with Lua Chips and carrots.


Smoked Salmon Sandwich

Whole grain bread, Sriracha mayo, baby spinach, avocado with a little bit of salt and lemon drops, and smoked salmon with capers.




Lua Nachos

Bake Lua Chips topped with boiled shredded chicken, Monterrey jack and cheddar cheese at low temperature until cheese is melted. For the salsa: roast in the oven: 8 plum tomatoes and 1 yellow onion drizzled with olive oil and salt to taste. Blend roasted vegetables and add chopped cilantro and juice of half a lime. For the chipotle crema: mix sour cream with roasted and processed chipotles. Top your Lua Nachos with salsa, chipotle crema, avocado and chopped cilantro. You can substitute the chicken with black beans if you want your nachos to be vegetarian.




Lua Chips with Dip

1/2 cup cream cheese, 1/2 cup sour cream, 5 tablespoons of your favorite dip powder, 2 tablespoons Worcestershire sauce, 1/2 cup chopped cilantro. Salt and pepper to taste. Blend.




Lua Chips with Spinach and Artichoke Dip

6 chopped shallots, 1 bag of baby spinach, 1 can of artichoke hearts, 1/4 cup of mayonnaise, 2 cups of parmesan cheese, 1 cup of cream cheese, 1 teaspoon of cayenne and now you can dip them with your Lua Chips!




Chimichurri dip

Lua Chips and Carrots with Cottage Cheese Dip: Cottage cheese with chimichurri sauce and Worces$

Serve with Lua Chips and carrots.


Tuna with Vegetables

Tuna: 1 can of tuna in water, 2 tablespoons of light chipotle mayo, juice of 3 limes, 1 tablespoon of chopped leeks, 1 tablespoon of corn, 1 tablespoon of tomato, 1 tablespoon of chopped cilantro, 1/2 a tablespoon of Worcestershire sauce.Salt to taste. Serve with Lua Chips.


Healthy Chicken Lettuce Wraps

Healthy Chicken Lettuce Wraps: 1lb of boiled shredded chicken breasts, 7 green onions diced, 2 shredded carrots, 1/2 a zucchini diced, 1 cup of diced cabagge, 1 tablespoon of sesame seed oil, 2 tablespoons of teriyaki sauce, 3 tablespoons of soy sauce, 1 tablespoon of rice vinegar, 2 tablespoons of peanut butter, 1/2 cup of chopped cilantro and 1/2 cup of processed peanuts. Heat the sesame oil and fry the green tomatoes. Add the the rest of the ingredients. Serve with lettuce to form the tacos and Lua Chips on the side!
